Seems like a good idea to tally up the scores and see how the various bacons stacked up. I'm sure most of you are scoring at home, but for those that aren't, here's a quick-n-dirty rundown for you:

You must review Nueskes applewood smoked bacon, the choice of every discerning fine-dining chef I've worked for all over the country. Absolutely marvelous. I highly recommend buying it in slab form, and hand-cutting slices, or lardons for salads, or anything really.

I live in Indianapolis, and recently found it in a 'Fresh Market' grocery store here, but before that would have to get my chef friends to order it for me, or order from their website. I'm quite sure you can find it in Chicago with ease though.
I agree with Pete, While I haven't tried all of the brands on your list, I do know that the Nueske's brand bacon rocks! The company is awesome and you are able to find it with a little more ease. Nueske's is my go to specialty/ splurge bacon when I cook. Jeff K. Beecher,Il
